Veggies Time – Radishes, Collards & Bok Choy
Getting veggies delivered to our house has really forced us to grow up and eat some healthy stuff. I don’t know what half these things are! Or, i know what they are, but not really what they look like. First, radishes. Those things that go on salads in salad bars, that no one actually wants to eat. They must be healthy cuz they don’t taste good. But i found a recipe for baked radish chips! These are very spicy, and small, and they don’t taste like radishes at all…success! What about collards? Those are the greasy things with bits of pig parts all over them, right? Wrong. I found a raw gingered collard greens recipe, no cooking, very sweet, no sugar. Honestly, still not my favorite thing, but I’ve survived two rounds of these things so far, with i’m sure lots of vitamins. Bok choy – I see it in the chinese restaurants, all cooked, but i had a hard time figuring out which of those leaves in our shipment were what. Figured it out and tried this stir-fried bok choy with ginger and garlic recipe, they tasted pretty good, very like I would find in those restaurants. So, until the next shipment!! What are your favorite ways to prepare these veggies? Do you like them? Let me know if you try the linked recipes above and how you fared with them!
